#5 – Perfect fish tacos
To make batter blend flour, rice flour and salt in a medium bowl. Gradually whisk in club soda until no lumps remain but thick enough to coat the fish. Now coat the fish and carefully place in oil. Oil temperature adjusts so that fish stick together. Fry fish with spatula, until its crust is crisp, puffed and golden brown. While fish is frying, use tongs to heat tortillas and transfer to plate and cover with plate to keep them warm. Now serve top tortillas with fish, hot sauce, slaw, avocado, cilantro and lime wedges.
