#13 – Salmon with lentils and mustard-herb butter
For mustard-herb butter, mix unsalted butter, chopped chives, tarragon, grainy mustard, fresh lemon juice with salt and pepper. For cooking lentils, boil lentils, water and salt in a medium saucepan. Remove from heat hold half cup cooking liquid and remove lentils. When lentils cook, chop leeks and cook in a butter over low heat. Add lentils with reserved cooking liquid with mustard-herb butter and cook. Add lemon juice, salt and pepper. Serve salmon with mustard-herb over lentils.
